I dont know about the visor but for roll overs it could be a simple ragdoll with camera inside the helmet... it would give an awesome sense of immersion

  The first helmet I made its not the best but it works for me. Its the helmet Sebastien Vettel was using in the singapore gp

For the animation you could have the hand off the steering when rpms are close to right and move the lever when commanded.
