I drove for 10 or so minutes and I can only playback/save like the last 3 minutes or something. Why's that?

Open your "kart.ini" and insert the following lines at the end:

[core]
replay=150000000		; 150 MB

The value you choose (here 150MB) depends on the time you need in the replay.
